Shot a 'jake' one time with a 2" beard. Roasted it in the oven, as one would normally do with any other poultry. Couldn't chew the gravy, it was so danged tough. If I ever shoot another one, it will be deboned and canned in pint jars. Charlie

Boil them for 4 hrs. Yes thats right. 4 hrs.
Pull meat off the bone.
Take 2 forks and shred the meat and pick out the tendons.
Put in a oven safe pan and add your favorite BBQ sauce and bake at 325 till hot.
Put on buns. Add whatever you like to your buns.
Works with thighs too.

Instapot them. I love them, awesome flavor. We just figured that out this winter. I ask for them constantly. We used to make soup also good.

You have to be a good cook to prepare a turkey for eating. There's a lot of skill involved in cooking a turkey properly. I would love to eat a deep fried turkey. Those of you bad mouthing turkey haven't been hungry recently.

I make BBQ out of the wild turkeys I kill. I boil the legs for two hours then throw the rest of the carcass in for an additional two and a half hours. I pull it all out and let it cool then shred the meat, you'll end up with a mostly clean pile of bones. I fry some onions, celery and garlic in the same stock pot I boiled the turkey in. Then I add a sauce I make with a bunch of different ingredients. Then add the shredded turkey back in. I serve on a Kaiser bun with relish and BBQ sauce. An average size spring gobbler (18-20lbs.) will yield about a gallon of BBQ.

Lugnut just showed you how much meat you will waste if you throw those legs away. I cook the legs half a day in a crock pot and and it pulls apart easily and is tender. Makes beautiful soup too. Waste not want not.. That's all the meat, not just leg meat. I've eaten enough wild turkey legs in the last 30 years I don't need to eat any more. They're edible. But not good.
