Put them in a pressure cooker for a while. Or braise em down. Then pick them clean, mix in some breast meat, and make turkey pot pie. Fantastic meal.

Shot a 'jake' one time with a 2" beard. Roasted it in the oven, as one would normally do with any other poultry. Couldn't chew the gravy, it was so danged tough. eek


If I ever shoot another one, it will be deboned and canned in pint jars.

Boil them for 4 hrs. Yes thats right. 4 hrs.

Pull meat off the bone.

Take 2 forks and shred the meat and pick out the tendons.

Put in a oven safe pan and add your favorite BBQ sauce and bake at 325 till hot.

Put on buns. Add whatever you like to your buns.

Works with thighs too.

I boil a leg and thigh for a couple hours then pick the meat off the bones and make some noodles with the broth. Very good.

Down South we deep fry them. Wild turkey makes store bought taste like shoe leather.

Raised them for yrs. Sold them from our hatchery. Ate one and that was too many. Tame bird puts them to shame for flavor,size and tenderness.

The breast get made into turkey salad... the legs never make it into the house... tough stuff IMO.

crock pot, 8-10 hours on low. add diced onion ,celery ,carrots, chicken stock, garlic powder, pinch of everglades seasoning (got that in florida) , and a pinch of poultry seasoning. it'll be fall of the bone tender. its a shame so many turkey legs and thighs get left for coyote food. if you've ever wanted to try making those parts edible but heard horror stories about boot leather tough give this a try. not like you got anything to lose.

Instapot them. I love them, awesome flavor. We just figured that out this winter. I ask for them constantly. We used to make soup also good.
