I'd go the terrier route (not pit, of course). The are generally quiet. Normally very people friendly (but sometimes not so animal friendly).

Thick curly hair on a Boykin, with very minimal shedding. Duck dog, trapping partner, extremely intelligent and loyal.

I'll second the standard poodle. Wife and I are baby sitting our youngest daughters at present. She is an RN working in a cardio-thoracic unit but has been pulled/volunteered into a covid-19 ICU for the last two months. As a side note she graduates today as a Nurse Practitioner. So in the interest of social distancing we have been keeping the dog because she would be dropping him off mornings or evenings on the way to work and picking him up on the way home. He is a squirrel, rabbit chasing machine. Catches them too. Does well on bird farm pheasants. He is an excellent retriever with a super nose, as good or better than my sons Labs. He doesn't range out far at all, always in gun range, with an easy recall. The only drawback is combing the trash out of his coat. We do keep him clipped pretty close, though he is quite woolly right now what with all the groomers being shut down. He is the smartest dog I have ever dealt with, extremely loyal. He won't let my daughter out of his sight. A very good watch dog, sometimes too good. He is also a certified therapy dog. Also not in the least bit gun shy. when he sees it or hears it go off he knows what's up and wants to go. I have not taken him on the trap line yet.

I'll second the springers. I have had two that were super gun dogs and great family dogs. Though the second needed a little re-calibration with my youngest. It was a dominance issue. Solved by my wife, two oldest kids, and myself completely ignoring the dog. My youngest was the only one to feed, water, let in or out, exercise, play with, talk to, or drill work, anything at all. It took about a week and she figured it out. Little Lauren was a dominant figure after all. Worked well and we never had to revisit it again.

Hard to beat a field bred springer or any other spaniel for a all around dog. Boykins and American water spaniels probably shed less but will cost more. Our springer will hunt just about anything I put him on, I use him mostly for pats, woodcock and ducks. Great sidekick, stays close on instinct, mine got caught in a coyote set while hunting and won't go near steel now, great with kids if you give them exposure when young.

Cur, an aggressive dog or of poor condition, mongrell.
The mountain curs of old were all mongrells, hines 57.

Granddad never had anything but curs = mixed breed mutts
Every one of them were excellent squirrel dogs. He preferred to have some terrier blood in them.
They were all named Nick, short for Nickademus.
One I remember quite well was so smart he would fetch anything my Granddad would send him after, the grandkids, the paper, his pipe and tobacco, even the eggs from the chicken coop with an Easter Basket that was his.
Bottom line is like Granddad said “ you have to be smarter than the dog to teach him anything, and you HAVE to work with them not spoil them “. He never let us kids play with his dogs, said we would spoil them.

I prefer our Catahoula over most breeds i have hunted and trapped with. I have hunted with designated dogs of a million varieties. Purpose bred coon hounds and coyote dogs and bird dogs a plenty. My biggest issue has always been that i don't just hunt coon or pheasants. I kind of hunt and trap everything and enjoy the company of a decent mannered dog. This Catahoula for us is pretty much that. He rabbit hunts and bird hunts and runs the trapline with us. plus he plays fetch in the yard and likes to just be a dog around the place. Main thing i would suggest is to get a dog with a good nose.

Aka wild Amish dog
Short hair very loyal good energy put about everything I come across up a tree
Stays tight on tree till I arrive
Excellent with kids stays in house if we not in woods
Even put the poultry back in the pens at night

Standard Poodle or Boykins Spaniel. Be sure and meet the sire and dam beforehand if you can. If they're neurotic, the pups will be too.

Check out the blue heeler. Great dog, shedding would be the only issue I can see.

Blue heeler is the best dog we've ever had, great with kids and gamey enought for critters. Good for herding chickens out of the garden also. Probably be looking for another puppy before too long.

I have a blue heeler/border collie mix very smart dog and listens good. Only trouble is he sheds like crazy, he’s another Wild Amish dog lol

ill bite on this one just cause its such a little known breed but the Boykin spaniel has my vote... i got it for all reasons you said...super easy to train...best with kids and will hunt all day and sleep right next to you and the kids all night no problems. get one from a good hunting breeder do some asking around and you will be very very impressed with this breed. can't say enough about them. shedding is seasonal last maybe month in spring and fall. sure are sweet dogs that love to work and love to curl up when the time comes. my boykin is 1 year old and he's around an 8 year old all the time. they love getting into the mud together when im not looking. he's a better bird hunter then me and im his limiting factor thats for sure. he will track anything i train him on. id give them a good look over.... great all around dog.

I’m a springer spaniel guy. Most are just as happy hunting as they are rolling around in the grass with the kids. Great dogs
