I use a one inch belt sander with 3000x tool paper. One sharpen per two beaver.

Hit it with a leather belt with compound once a beaver, and keeps it able to shave the whole time. Clean skinning.


I prefer the belt because it sharpens everything. Thirty seconds and axes can shave also so long as the steel is good. Lathe chisels, wood chisels, planer blades. Everything is easy on it.

The only things I don't sharpen on it are flat or Scandinavian grind knives like Mora's or my helle knives.

They get wet sandpaper and glass, and are only stropped briefly on the leather belt sander belt.

Paper wheels on a bench grinder. Doesn’t take off much metal on the grit side and the buffing side will hone a knife in two passes if the knife just needs touched up. Hands down the best knife sharpener I’ve ever had. Think I’ve had it for at least 10 years now.

A diamond steel to sharpen then a F. Dick smooth steel to finish the fine edge remember it's easiest to keep a good edge on a knife it you take a few seconds to touch the edge up with a steel you knives will last longer too .

F.Dick hyper steel is what I like between sharpening. Probably handles 95% of my sharpening needs. Watch a video of poultry production line and you will see that the employees swipe their knives on a fixed set of spring loaded steels between every chicken - about a two second touch up. As a fish cleaner, we used F.Dick spring steel almost exclusively.

Norton oil stone,,finish up on leather strop.You can shave with it after that.

a good steel will serve you well, to KEEP an edge.

one of my (few) prized possessions is the professional steel my Dad had, as long as I can remember.

Until he entered management, he was a professional Meat Cutter (NOT "butcher"!) for the Great Atlantic and Pacific Tea Company; back when beef arrived in Quarters.

This is great advice. Learn the concept of how to sharpen a knife and you can use a rock and your shoe. Learn to maintain the same angle on any sharpener you use.

I use a Dunn system. Fastest sharpener I have ever used. Sharpened a kitchen knife today to cut a young boar hog. He didn't like it but it went pretty fast because of how sharp the knife was.

Again, learn the concept and you can use about anything.

Nice but some people just can't get the hang of it and I am one of them.

I know some swear by that system. I have one and the results were poor for me. Then, I bought a work sharp. They should have named it, Work Sharp, the sharpener for dummies, cause it really works for me.
