We all get cravings from time to time. Seems I have been getting them more frequently lately. Must be the natural aging process. smile I had a taste for some pickled eggs and deer jerky. I had lots of jerky and deer salami in the freezer so I just needed the pickled eggs.

I picked up two 60 count cases of large eggs. .Did two batches of 5 doz. each Monday and Tuesday. I didn't plan on making a second batch but I had near 3/4 gal of brine left over from the first batch so I knew it would be plenty for another 5 doz. eggs. I did have to get 3 more large onions ( 2 Red and 1 Vadalia onions ). Already had a few pints of canned beets from the garden the last two years so I was ready.


My first time doing pickled eggs. Ordered some cases of ball jars,1/2 gals., quarts, pints and lids from Walmart. Ended up with 10 qts. and 2-1/2 gal jars.

I got some secret herbs and spices from the shop along with some cinnamon sticks and I was good to go.

How long can you store them? It would take me more than a year to eat that many.

A few weeks is what is reported they should keep in the fridge.They dont last that long before they are eaten. Never had any last more then a week or so because we eat them up pretty quick.

I will give some away to friends and family. Word seems to travel fast when I make things. So much for social media.
