With beef getting somewhat scarce and expensive my sister and her husband decided to butcher one of their steers. They asked if we wanted to go in on part of it for a share of the meat. We thought that sounded like a great idea so we agreed.

This particular steer has been a PITB from day one and my brother-in-law was looking forward to culling him out... It took them about an hour to get him loaded in the stock trailer and he actually wound up spending the night in it. The next morning they drove to the processor and backed in to unload him. They figured getting him out to weigh him was going to be a battle... But he stepped right out and walked over to the scales. Then turned around and climbed back in the trailer and decided he was going to stay... They poked, prodded, and harassed him and finally got him back out. He ran back over to the scales, turned around and ran right back into the trailer and then he...

He cleared the front of the stock trailer. Landed in the bed of my BIL's pickup. Jumped out of the bed and tore through two fences and stopped in the pasture.

But the pasture belonged to the processor and his escape was cut short with a rifle shot. They got chains and used the tractor to drag him back up to the plant for butchering.

My sister said she wished she had managed to catch all this on film... Well we got this today. Security cameras at the processing plant caught it all.

To bad you didnt leave him a bull. Been pretty valuable to a rodeo bull contractor.

Lucky for them he jumped out the side of the pickup bed. When they jump over the cab things get really ugly!

The funniest part is that my BIL is your typical rancher... Hardly ever says more than 2 words at a time... But my sister said when that steer bailed out of that trailer my BIL yelled "Oh S---!"

Animals need to be CALM when euthanized for the meat to be at it's best. Adrenalin BAD !

that meat will be fine after it hangs for a couple 3 weeks. will be some that is bruised though

Hanging doesn’t help meat from a dark cutter. Nothing but a grinder will help. I had one turn shytty on me when he went to the processor too, blowing snot and slinging dirt. Tough as shoe leather.

Thats why when one goes though the sale barn bouncing off the rails, it brings about $25/ cwt.

Lol. That's a great story to have to tell.
I got this white steer that I'm looking forward to taking to the butcher, he's been a pain since I've got him, definitely needs a attitude adjustment. I may have a story like yours when I take him [Linked Image]

It could still be very good, diet has more to do with it in my opinion. I’ve shot a pile of deer with arrows and as most of you know it’s not the calmest kill but the venison is still delicious!!

The biggest factor is how long the animal was stressed. Sounds like it didn’t last too long, so he might be fine. Like shooting a deer with an arrow, its over in a short period of time so the meat is fine. When they spend an entire day or two bouncing off walls is when you really have trouble.

My families taste must not be as refined as yours . Years ago the neighbors show horses got in with their 4h calves and run one of their 4h stiers down and broke its back . They called us because we butchered and had a front end loader . That stier was bug eyed and bellering when it was put down . It ate fine .
