I normally soak in salt water then blanch for a minute and fry with garlic and butter...…….what you all do??

Git my first batch today but will be a lot better a couple days from now.

I found some last weekend, but they weren't the right variety of fern so I didn't bother. Enjoyed some ramps though.

How to cook Fiddle heads......place fiddle heads into a pot of cold water.....then turn burner on high....once water staahts boiling...reduce heat to medium for a 5 minute simmah. When the 5 minutes is up...strain fiddleheads into a strainer. Then refill pot with cold water...dump fiddleheads into pot and turn heat on high....once boing, reduce heat to medium and cook for another 5 minutes. When buzzah goes off...strain...add butter,salt,pepper....and I like some fresh grated Paahmeasan cheese on mine...enjoy.

Why do you have to boil them twice?

Around here they are totally covered in brown fuzzy stuff. As in, most look like a little chickens head and neck

Is there a way to get that stuff off easily, or do you not worry about it?

They should be covered in a papery material and have a notch in the stem, like the ones pictured in Nessy's photo, though the photo doesn't show the papery material well. If they're fuzzy, they may not be the right variety for eating.

Don’t think you are seeing the right type of fern Hutchy. Google ostrich fern

I just rinse mine 2 times in cold water then steam for 15 minutes and serve with butter and vinegar. No
Bitterness at all. Just yummy tender goodness.
