Mom used to make Hominy casserole. Hamburger, red beans, and hominy. she made it once a week when the farm was having a rough time in the 80’s. Man I hated that stuff

She asked me if I wanted some white corn , but something looked wrong , way wrong...

For thee last 15 years I have grown and ate many types of open pollinated corn. My conclusion is white corn is people food and yellow is animal food. The best cornmeal I have ever tasted was from Pencil Cobb corn just a really good taste. This year I am growing a white corn that an old Cherokee gave me. Has been in the family since before his grandfather. They use it for hominy and flour, anxious to try it. Mike

Oh Man.... that was a treat when I was kid. Mom would fry it in lard and split smoked sausage, and fry that with the Hominy. If it was a good day she would fry some what we called "Greasy Fried Taters". The good thing about having this meal was the fact I had 3 sisters and none of them liked hominy and the "Greasy Fried Taters"... but like it was in the old days … you ate it or you went hungry until the next meal. And since I loved it and they hated, I would eat so much I would swell up like a toad since I was so skinny.

White or Yellow cow corn soaked in LYE to remove the kernels hull. Course they rinch it real good before they can it or dry it and grind it into GRITS. Hahaa what could possibly go wrong?
Hominy aint to bad with real butter and a little brown sugar or real maple syrup.
I prefer grits though with the same treatment. Just another form of starch.

Great with Bacon and eggs, salt and pepper to taste.
