Never put a chef knife in a drawer. It will chip the edge bouncing around in there with other cutlery. That being said, My go to are the knives from Infinity. I have several from that line and they are G1 core Damascus and don't break the bank either.

I have a $2 reground 10" chefs knife I found at a tackle shop, It sharpens up, cuts great, and did I mention it was cheap? grin

Rapala 14" filet knife . Keeps good edge and at 13.95 better than most. Oh yea older ones (or new ones) work great as skinning knives. But the little brother 8' is a coon peeling machine !!!!!!!

Using a Filet knife as a chef knife substitute is like using a butter knife as a screw driver.

depends on what I am cutting I have a Dexter 145s-6 and a Dexter 145s-10 .

a 6 inch and a 10 inch chefs knife I used to have an 8 inch Chicago but it broke. it was a nice size and I keep thinking about getting another 8 inch either a dexter or a victrinox

the 6 inch is great for onions and when I want more tip control , the 10 is great for rock-chopping through a pile ingredients , carving melons and other bigger stuff

I also use a 5 inch boning knife and a paring knife a fair mount.

travel cooking knives are a 5 inch green river camp knife and a 5 3/4 chefs knife that has a belt sheath

a decent chefs knife doesn't have to be all that expensive , the 6 inch was 25 dollars and the 8 inches I have been looking at are about 30 dollars.

there is a Jamie Oliver youtube video where he teaches school kids to cook a stir fry it lays out very basic chefs knife use , from the chefs point of view a chefs knife , a parring knife and a Bread knife are really all a cook needs for most things , there are specialized things for other knives. but those are for skills learned after the basics.



there are lots of other good knife skills videos out there also .

Either a Victorinox or Forscher 10 inch cimeter (simitar) are my preferred knifes for filleting and other meat cutting. They aren't expensive, fairly easy to sharpen and feel good in the hand.
I don't like a flimsy blade for filleting, it's too hard to feel where the tip of the blade is imo.

The best I have, for the price, are "daily chef" from China. I buy them at SAM'S CLUB for around $14 for a set of two. They come super sharp and hold an edge. I have bought all my kids a set. They love them.

Yup, Victorinox / Forschner are the same thing as are Wenger / Swibo , Both made in Switzerland. Excelent knives at very reasonable prices.

Depending on what you are looking for, I have both brands in limited stock.

I can check when I get home tomorrow evening if you are interested.

Wustof, victornox, j a heckles are some of my favorite. Never put them in a drawer or dishwasher.
A good oval carbon and diamond steel too
