The biscuits and gravy thread got me thinking.

My wife thinks I'm nuts and my almost-grown kids have been convinced of it too. When I was a kid my mom made egg gravy fairly often and we ate it over biscuits. Same as sausage gravy or chipped beef (dried beef) gravy except made with chopped up hard boiled eggs.

I make it once in a while. I have never convinced my wife to make it and nobody else here will touch it. In fact, they complain the whole time I'm eating it. I've been wondering for years if this is something my mom came up with or if it's a thing somewhere.

Never heard of it, share that recipe man. Pops used to make stinky bread, smelled like a hobo's taint but tasted good. I don't know how to make it.


I wonder if tap dancers walk into a room, look at the floor, and think, I'd tap that. I wonder about things.....

Mom made it all the time. I make it once or twice a year. If you can get enough black pepper on it it's really good. We always had/have it on toasted white bread.

Like the OP said very similar to sausage gravy. I dice a medium onion and brown it in about 4-6 tablespoons of butter, add a 1/4 cup or so of flour and let it cook just a minute then add milk until you have a thick white gravy. Dice up 6-8 hard boiled eggs add to the gravy and heat it through. Salt and pepper. Takes about 10 min. maybe.

I don't do it with onions but I will now.

A little butter and flour in a pan to make a roux. Wisk in milk until you have a white gravy. In go diced hard boiled eggs. Salt and pepper to taste. Not fancy at all. As a kid, we had chickens so this meal was practically free - probably why we ate it.

I have occasionally gotten a little fancy and thrown in some chopped up cooked bacon.

Have it every Easter and love it. I should make it more often. It freaks some people out when I tell them about it. It is kind of like putting mustard on a toasted cheese sandwich. Does not sound that good, but is absolutely awesome.
