Yep. Most folks are predisposed to not like speedgoat because ~ 95% aren't taking care of correctly. Most don't believe the flavor of a good pronghorn steak after not liking them before. It's a very stark diference. The only downside is there is not a lot of meat on a pronghorn so it's gone pretty quickly.

I don't get the Dall rib thing. I had a hunter cook fresh ones over fire once, because he didn't want to pack all those bones and fat. What little meat there was, was like chewing rubber bands. I've slow cooked them in a roaster over a woodstove many times and they are basically a lot of bones, gristle, and fat, with some meat in there and gammy. Least favorite part of the sheep.

Did you try dry smoking them Dirt? Dry smoked bear ribs(deboned) are very good. Not many save the ribs on a bear.
Forget that fear of gravity-get a little savagery in your life.
