Several different ways to go for putting it up. I like it cut off the cob and cooked before freezing. Getting ready to put up a bunch myself.

Cut it off about halfway down the kernel flip the knife and scrape out what's left on the cob. Heat over low heat to a simmer then chill and freeze.
That's how mama did it.

When cooking from frozen add a dollop of butter, salt and pepper to taste

I prefer it cut off Hobbie. Cooked with cream,butter, and sugar. Pretty good eatin about December.

Never canned corn, always froze it.

Always blanched it on the cob, quick chilled and then cut off to freeze.

If you haven't prepared anything yet,,I would have that with supper,,and meanwhile order the "Ball Complete Book Of Home Preserving" Tells everything about canning,,preserves,,pickles ,pressure canning the whole nine yards.

zip lock bags on the cob. Don't even bother to blanch anymore. Will last until next spring. Only down side, it takes up more room in the freezer.

I use a large 30 qt container (turkey fryer) to boil about 30-50 ears at a time depending up on size. I cook or boil for 15-20 minutes, take out put in clean 6 gallon paid and cool with well water. I cut with a knife all the corn using a knife and a cutting board. I package in pint bags and freeze. I can get a bout 5-6 years per pint when I have good sized ears, more if smaller. I like to cut right down to the cob to get the richer and sweeter starch.

If you can freeze it simply cut it off the cob put it in freezer bag. If you try a few bags you won't do any other way just to easy.

I stack them in a large cooler at that stage and top off cooler with boiling water. Shut the lid for 20 minutes, take out cut corn off cob, bag then freeze....
