My wife has canned every since we got married. When we go shopping she picks up a couple boxes of lids. They are getting hard to find. The cost has gone ski hi. She said she was glad she did not wait to buy lids.

canning is way up as a covid activity
that and food insecurity
general unrest
garden seeds, canning supplies , bullets and guns are all seeing record years.
America only has one issue, we have a Responsibility crisis and everything else stems from it.

I pulled a bushel of beets and 1/2 bushel of carrots today for Mrs Brownie to can. She makes great pickled beets.
We also can potatoes, green and yellow beans, tomato and grape juice and venison.
We freeze peppers, huckleberries, blackberries and corn.

I know a bit about everything but ashamed to say it that’s one thing that is lost in my household. Mom still cans every year. We were always in the field when I was a kid and I never learned the process. I think I’ll have a sit down with her the next time it rains.

Nessy, if you have tomatoes you can freeze instead of can. Just get the water boiling and blanch tomatoes for a minute or two, peel, cut if needed, stuff in freezer bags and freeze. Taste like out of the garden when thawed. Use for chili, pasta dishes, or whatever.
