My wife has canned every since we got married. When we go shopping she picks up a couple boxes of lids. They are getting hard to find. The cost has gone ski hi. She said she was glad she did not wait to buy lids.

canning is way up as a covid activity

that and food insecurity

general unrest

garden seeds, canning supplies , bullets and guns are all seeing record years.

America only has one issue, we have a Responsibility crisis and everything else stems from it.

So far we've finished the potatoes, beets, and summer squash. Still waiting for sweet corn, winter squash, tomatoes, and salsa.

We had a bumper crop of cucumbers so my wife and mother in law made several jars of pickles. This the first time we tried our hand at canning hope to add green beans to the list next year

I pulled a bushel of beets and 1/2 bushel of carrots today for Mrs Brownie to can. She makes great pickled beets.

We also can potatoes, green and yellow beans, tomato and grape juice and venison.

We freeze peppers, huckleberries, blackberries and corn.

I bought an all American 21 qt pressure cooker as soon as the Covid thing hit but thats as far as I've went. Git about 60 qt jars and lids. No garden this year. I'd be intrested to here how big of cookers you guys use and how many qts or pints you guys can if you don't mind sharing.

I know a bit about everything but ashamed to say it that’s one thing that is lost in my household. Mom still cans every year. We were always in the field when I was a kid and I never learned the process. I think I’ll have a sit down with her the next time it rains.

I have an old aluminum pot for canning but each year I say I am going to get a pressure canner. Still have not got one.
Today I put up 2 cases of hot garlic green beans and 1 gallon of crock pickles. Finishing the rest of the green beans tomorrow and starting the dill cukes Saturday.
I think I am going to have lots of tomatoes this year too.
Nessmuck, canning can be fun. It is some alone time in the kichen for me although I get some help sometimes. Enjoy

Most are way ahead of me. I can a lot of tomato products. I make a lot of sodium free salsa. Really neat to raise your own tomatoes, all types of peppers, onions, carrots etc. to make the salsa. My stab at garlic did not work well for me this year. With all the moisture and the one garden close to the lake the kale crops are great. I have some amazing broccoli heads right now and the early cauliflower is really looking good. My early sweet corn is about a week away.

Nessy, if you have tomatoes you can freeze instead of can. Just get the water boiling and blanch tomatoes for a minute or two, peel, cut if needed, stuff in freezer bags and freeze. Taste like out of the garden when thawed. Use for chili, pasta dishes, or whatever.
