This is what I find interesting about coyotes, I've tested beef, deer and lamb liver in my area and I could get a little response on them but it was mild compared to other bases.
I will add I have had good success with liver and Jamison's bait solution but after some real testing im pretty sure it was mostly the bait solution doing the damage and the liver just being a filler

I've used chicken hearts a bit, placing a good bait deep in a hole set, then adding a half dozen hearts or so on top of the bait. Grey fox, when we had them, would try to steal the 'bait' and get only one heart at a time. With small feet, they had an uncanny ability to miss a trap pan. That meant they spent more time stomping around, which gave a better chance at putting the paws on the pan. My problem is : I like chicken hearts, often eating them raw as a child.
