Texas beef brisket if done well needs nothing

good pork shoulder or whole hog a little vigenary based hot ( and I mean HOT ) sauce helps cut the fat I can handle some of the mustard sauce if its in a sandwich

sweet sauces the hide poor BBQ

Not mustard....mustard sauce. Its a some what spicy tangy vingary sauce.

Texan dry rub brisket and Mississippi delta pulled pork are my favorite.

First real bbq I ever went to , the owner of privateer boats brought up a towed smoker and two pigs, boy did that smell good.. then they proceded to tear it apart, pour vinegar on it, and slap it on some white bread...that's when I lost all respect for north carolinians.... cool

Why would you do that to brats though? Brats just need stone geound brown mustard and kraut.

Only way to eat Texas BBQ is to drink a case of Lone Star first.

I love workin' in North Carolina the people are great and there are purdy gurls everywhere but the BBQ I tried over there doesn't even qualify for BBQ. It is always pulled pork with a but load of vinegar on it. Yuck
