Well Grandma would only cook a yearling/small one. She would boil it and change the water out removing the fat off of it each water change. Once it was falling off the bone she would de-bone it and put it in a roaster pan with barbecue sauce and bake it. When she was done it was like eating barbecue brisket.
No one cooked like Grandma.

I have never been...nor do I ever hope to be...that hungry.

Anything you have to keep changing the water out of or skimming the grease off of as it cooks is not fit to eat in the first place.

Make sure there are no spots on the liver or the meat, and take out all of the glands before cooking.

Glands and fat. All glands gone or you’ll never try it again. Trim off as much fat as possible. Cook low and slow.

Cook it raised up like on a broiler Rack so the grease drains and won’t lay in/absorb it.

after skinning and gutting my grandpap woulld just cut the head and feet off and then cook em with sweet tators and onions laying belly down in a roasting pan.
do think he cleaned all the fat off he could tho, lol one sunday with most of the family at his house he pulled a coon out of the oven and said that was dinner.
he let the wimmin folks think that was all he cooked for a bit then got the beef and tators off the flour box on the back porch.

Coon is very good to eat. Remove all the kernels and as much fat as you can. BBQ coon is good.

peel off the hide and see guinea worms, strung out 10-12 inches long, going down between the different muscle groups,,,,,nope,,,aint eatin' that.
