My uncle couldn't wait to get the Y O Y .
Late summer mornings often started with the farm dogs treed in a fence row.
Trimmed as much fat off as possible then, open the armpits ect. to remove kernels.
Belly down on the grill to slow cook dripping fat off most of the afternoon.
Once he had it at the correct cook down ,
Turn up the heat and get ready to apply sauces as desired during the browning down stage.
As best my memories recall.


One thing I feel for certain . butcher and remove fat A.S.A.P.
Once the fat starts to turn rancid , I believe it is TOXIC
I believe it starts degrading rather quickly.

we tried one , medium size young female , skin , cut all the fat off you can and the glands , lumps under arm pits and inside of legs feel around for them.
we par boiled broke it down to 1/4s then tossed the water , put fresh water and spice and made stew.

it reminded me a lot of turkey leg a pulled/shredded bbq meat for sandwiches would be my choice to do with it should I eat one again.

we did this at scout camp a few years ago. Some parents maybe weren't so happy about that , but then they should have volunteered to go on a December camp out in the misting rain.

Can’t be much different from eating a bear. They will both eat anything from a donut to a diaper (used). I’ve ate bear btw

I ate coon once when I was a kid. I thought it was pretty good.

When I was a youth we had persons in the area that cooked coon regularly. Most times it was barbecue coon or coon stew with potatoes, carrots and onions etc. I have not had any lately. I tried cooking a leg shank some time ago and it was not good at all. In the FFG a few issues back there was an article by a person making coon brats. I have lost that book with the process he used. Has anyone else made sausage type meat products using coon meat as a base and if so did you handle and cook it the same way that those that bake the coon or make barbecued coon?

If Biden wins and we go south like Venezuela we may have no choice but to eat coon and such. People will be looking for any food to satisfy their hunger.

Gross man! Possums and coons I swear are the only two critters dead on road that even the crows won't touch!

I ate some raccoon leg in the spring, it tastes pretty good, I think it's just getting past the physiological thing. After you get past that I think it would taste way better. But when I had it it was like roast beef. I think it would make a great jerky.

I use to sell at least 1200 coon each year to the southern Democrats. So It's totally edible.

They're good in stuff, like chili, but too strong to eat by itself, in my opinion. Anything is are to eat, as long as it's not rotten or poisonous,if you cook it long enough.

The biggest concern is during cleaning. Be careful not to nick and guts. They can have parasite eggs that can be inhaled.

My wife's mother baked it and it was delicious. She said the key was to get all the fat and glands removed. They considered coon a delicacy. But then, they also considered beef heart, liver, and tongue a delicacy too.

I don't like bear at all. I've tried it from 3 different people who swore if I ever tried their bear, I would change my mind. All 3 different times, it tasted the same, strongest wild taste of anything I've ever eaten.

There are so many good meats in the world to eat, bear isn't one of them.

In years past in hard times (when the Russians were no longer coming), my wife cooked'em different ways. Our favorite was pressure cook'em and take meat off bone and barbecue in a skillet.
I never did waste any coons, I always cooked 10 or so in a half barrel in cool weather, they would keep til my dogs ate them up. I also cooked beaver and rats, the dogs loved them raw but just a safety against parasites.
Most of my dogs didn't like possum even cooked.

I have a couple recipes around here for possum and road killed possum. The only difference is for road killed is you just need twp or three extras.

What is it about beaver that so many animals like?
I used to cremate my beaver carcasses in my outdoor wood boiler. I put 3 beaver carcasses in a wheelbarrow one night. I covered the wheelbarrow with a sheet of tin. Next morning my water spaniels tipped the wheelbarrow over and ate a good portion of the beaver. They wouldn't touch a possum or otter carcass.

Beaver meat is a favorite trapping bait for all kinds of canine critters.
