How does everybody cook doves. I am looking for some new ideas that are fairly simple.

I haven't had dove in years. Good eat'in. I used to wrap the breast in a strip of bacon and grill. Super simple and tasty.

I just fry them lightly in butter on hot cast iron. Some of the best tasting meat there is!

Eh...wot?

The bacon keeps them nice and juicy. They really don't need anything besides the bacon and some black pepper, but you could dust them with your favorite chicken rub if you wanted to.

Start with dove breast meat that is cut off the breast bone, so you will have 2 halves. Put them in a bowl with zesty italian salad dressing. Take a package of bacon and from top to bottom, cut the strips into thirds. Get a tray and put a glob of sour cream at the top, and some toothpicks and jalapeno slices along the top. This is your work station.

Take a half a breast out of the bowl and rub the inside of it on the sour cream to coat it. Grap a jalapeno slice and put it where the sour cream is and fold the half over. Then take a third of a strip of bacon and wrap it around what you just made and pin it in place by putting a toothpick through it.

Cook on the grill and they are amazing. We would do this after a dove hunt and have 3 or 4 guys making them and the party would consume tray after tray as the party went on. Perfect party food, grab a toothpick and pull the breast off with your teeth. Amazing! I would even make a special every now and then with 3 jalapeno slices just to hear someone get a little loud when thay got a warm one.

wrapped in bacon and grilled then put a little BBQ sauce on them right before you pull them off. Another way is after you pulled the whole breast out use your thumbs to pop the two breast pieces off, thin slice of jalapeno and a thin slice of cream cheese, wrap in bacon, stick a toothpick thru to hold together and grill. Makes great popper appetizers. One other way is again pop meat off breast bone and saute with diced onions, use a little bacon grease or EVVO, a pinch of seasoning, we use a cajun type and a little garlic and then serve over rice. Got 3 limits chillin in the fridge right now and they will be gone tomorrow probably!

Our season opens Saturday and my sons and I got drawn for one of our local WMA hunts...can’t wait!
Pretty much what Flipper said. The hard part is getting enough done to serve, lol. Seems they are eaten either off the grill or as they are taken off.

Just the breasts with a little salt, pepper and garlic and then quick fried in butter leaving them pink in the middle. Deglaze the pan with port and show in a lump of cold butter to bind the sauce. Serve with new spuds and green beans. Really simple and tastes great.
