Ten years ago I did a clambake for our wedding anniversary. It was a huge success. Now, by popular demand I am doing another for our 50th in a couple weeks.
My problem is: Clambakes just aren't done around here, and, I have forgotten most of the details that I researched back then. To compound the problem, one of my sons insists that he wants to provide all the food. Of course, he knows as much as I do about clambakes. I have referred him to a local meat shop from where I got my stuff back when. That shop: flew in all the - seafood
- seaweed
- made the andouille sausage
- provided seasonings
- listed the local ingredients, like potatoes, and corn
- gave me detailed cooking instructions for a 10 gallon brewpot over a turkey cooker
If he is lucky enough to score all that, especially the cooking instructions I know it will be great. But, if he doesn't, I'm going to be presented with a jigsaw puzzle to solve while holding a tiger by the tail.
So what I'm asking for is pot stacking sequence of typical ingredients, and their cooking times. Also, any pairing wines, beer, or desserts.
I know this stuff can vary a lot, so any personal experience you may have, just might save my day. I have a feeling you can make us all drool a little for the next week or so.NEVER MIND

Man who mistake shillelagh for fairy wand; see pixie dust, also.
