Okay, I've been trying to make good use of all the wonderful stuff coming out of Zim's garden. We've both been kind of swamped lately, so I've been doing everything in a hurry and grabbing a few photos but didn't get them posted yet. Here's a little summary.

Here's an omelet from the girls' eggs, some cheese and garden tomatoes.

I canned a batch of tomatoes.

I roasted a batch of red bell peppers and put them in a (covered) pot to soak in their smoke. (I made those into a batch of roasted red pepper cream soup.)

I used onions, peppers, garlic, tomatoes, okra, thyme, basil, who knows what else into a nice big batch of gumbo. This night I added shrimp, but I'll freeze the rest without meat and we can add any meat or seafood any night we make some.

I made some of my favorite 4-ingredient fresh tomato sauce with chopped up tomatoes, garlic, basil and olive oil (olive oil not grown by Zim)!

Last night, I made a couple of rare, seared, butter covered filets to serve with my eggplant parmesan and fresh tomato sauce (and a dollop of sour cream). Zim's eggplants are lining up on the counter!

I also made a creole soup that we can add seafood or meat to for serving. I still have lots of garden veggies to use up! grin

I've been spying on your threads, Nessy. Great stuff there! I did also make a cucumber and tomato sandwich that would make you proud but I devoured it without a photo! laugh

Tonight will be king crab legs for Zim's birthday, probably with some more garden sides!

Debbie makes a stuffed Zoo Keen EE . Hamburg & Italian Sausage mix with cheese topping.
Can be froze and used this winter. Rather Good Couple stuffed peppers in there also
