So that is called Lechon in the Philippines? Funny, in Colombia it is Lechona. There they stuff those pigs with rice, celery, carrots, and chickpeas. Mighty fine eating.

Pig is pretty cheap in the Phills. right now so everyone is roasting pigs.

Note the golden brown skin. They apply canned milk on the skin before roasting.

philippines was ruled by spain for 400 yrs so, many words or derivitives come from spanish.

My friend sold lechon all the time from his farm....he raised and sent his kids to college doing this. Sadly he passed away last yr due to cancer in jaw that spread to brain. Week later wife died of heart attack. Left my friend without her parents which is a big thing in sa PILIPINAS. Both parents were under 50. Family is everything in philippines same as italy.(note...roman catholic native religion).
Actually those pigs were roasted with coconut milk and the best of the best dont tell the recipes. Actually its suckling pig(milk fed) like veal.



They may dress well and speak english but his rules is his rules......from dell in jeremiah johnson. And anybody who doesnt realize this in philippines is only kidding themself. White men are only there as a status symbol for social climbing....money or property and to make half white kids. Fact!!!

been to it...it was near my house. Neighbor worked there as sabangero. Disgusting to me. Seen grown men carrying their dead roosters crying. I said to my neighbor....u gonna eat him now? He crying replied no i cant....i give to my friend. I Said duh when u entered him thats the risk dont u know..most bouts end in seconds. A long one is a wounded rooster dragging himself for a minute and they just keep tossing them in.
