Going to be butchering 2 hogs in a couple weeks and looking for at least two different sausage seasonings to mix in. I want a breakfast type seasoning and maybe another type for dinners and such. Nothing fancy and not too hot. Looking at con Yeager and ac legg, just looking for reviews and suggestions. Thanks

LEM Hot Breakfast I like. Check them out they have many flavors.
Also I think the brand is Eastmans, Their breakfast stuff is good too.

You don't need a mix for great breakfast sausage, ground sage, salt and pepper. Add more sage than you think you'll need, salt and pepper, make a patty, fry it, adjust until its perfect. He's right

If you like a little heat in your breakfast sausage, go to Rebel Butcher Supply in MS. It's a great southern breakfast sausage with just enough "perk" in it to make it extra good. Only one I ever use. 18z package will do 50# of meat. Should run you about $10. They have other mixes as well. https://www.rebelbutchersupply.com/sausage-seasoning.html

I like and use Backwoods Seasoning sold by LEMs. Fresh breakfast sausage seasoning is my favorite.

You don't need a mix for great breakfast sausage, ground sage, salt and pepper. Add more sage than you think you'll need, salt and pepper, make a patty, fry it, adjust until its perfect. He's right X3 Recipe is: 8 oz salt (canning and pickling salt) 2 oz black pepper 1 oz ground sage Put in a bag, shake to mix. Then 1/2 oz (14 grams) per pound of ground pork. Start with 12 grams and taste. Same mix by measures... 3/4 cup canning and pickling salt 1/2 cup ground black pepper 1/2 cup ground sage 1 tbs per pound of pork to start......more or less to taste if you like it hotter, add red pepper flakes to taste.....start with 1/4 tsp per pound and work your way up. If you want to stuff in casings and smoke it.....you need to add cure to avoid botulism. (Insta Cure #1.......1 tsp per 5 # of pork)

Cajunwholesale.com send them an email for there retail website.The green onion sausage is so good We can’t make it fast enough in our meat dept.All there products are excellent.I think there retail prices are around 6.95 a bag and that does 25 pounds.On the green onion sausage you will have to add the spice and 6 bunches of green onions.
