Beef with bacon, any combo will work. I love beef, but we eat pork as something different fairly often.

Both are good. Beef is my preference but pork is a close second. Crab, clams, scallops, and oysters are third.

Cow but I eat far more pig. Same here and throw in some fish and yardbird for good measure.

Like about ANY meat but prefer pork. Good shoulder steak is hard to beat fried with taters and milk gravy on the side.

I like a variety.

i got to say though a nice pork shoulder or loin cubed up and turned into chili verde is mighty tasty.
I made a big batch of green chili last weekend. Roasted anaheim chilis with a couple poblano's tossed in for good luck, on the cook stove. I turned the fire up high and using tongs roasted them, one at a time, in the fire. Then used a mapp gas torch to finish burning all the peeling till they were black. Put one of the screen things in the sink drain and washed all the blackened peeling off. Chopped them up real fine. Put a 1/4 cup in a ziplock sandwich bag and froze all the little baggies. I really like that stuff. Nobody here in KS even knows what it is so can't buy it here. Whenever I get a chance I will buy a case of it. Senor Peno's is my favorite brand. Mix that green chili with some roasted in the broiler and peeled tomatillo's that been pureed with a little cilantro. Brown the pork cubes with chopped onion and thin sliced garlic in a cast iron dutch oven with olive oil, pour in some chicken broth add the green chili, tomatillo's and cilantro. Some salt pepper and cumin is good. Let it barely simmer 3-4 hours till the pork is falling apart. serve it on rice.

P.S. the best part of that green chili is the peppers were gifted to me by a friend. Goes by bigfoot on here. Thanks again Mark
