If your doing it for tanning salt in the feet will keep them from spoiling while drying if there is a bit of excess tissue left in there.Try to skin them right down to the last toe joint an nip off there with small side cutters.

I utilize Boco's method that he posted a couple years ago, I skin down to the pad and isolate each toe, separating them with an ice pick- the fish hook will aid in skinning down to the last knuckle that the nail is attached to. Trapper Dahlgren utilizes plastic hanger ends to facilitate fast drying and better air flow and I employ the same method after seeing his post. I also dry everything horizontally to let the arm pits dry better. Here's a coyote pic as an illustration:

I would turn the feet out so they dry better. When still pliable turn back in. Just like the rest of the hide. Sprinkle a little borax in each foot. I wouldn't use salt. It attracts moisture. This moisture may cause problems. It may not.
