you need to hydrate more or that happens
what ever you do don't salt it leave it over night and then try and stuff it in the poop tube hard as rocks

The recipe.... Sweat the onion and garlic in a little fat. Since this was beaver, I added 25% pig fat by weight. The beaver already had some fat, so it's probably about 30% fat. For my first grind, I grind the meat and fat separately through a "kidney" plate, and then mix in all the fat and spices and such thoroughly by hand. Just kinda turn it and knead it till it looks right. Then I grind through a coarse plate, since I planned on stuffing it. If it was going to be just loose sausage,I use a fine plate. Then I stuff immediately, but be sure to hydrate your poop tubes well, least they tear and spill the contents. I use a separate hand crank stuffer, not one that attaches to my grinder.
