Butchered a hog two weeks ago. Dry rub cure made by buckboard. Cured two weeks in a frig. Cold smoked a couple hours (temp under 150). Tastes as good as it looks. Have about 40 pounds or so. Took all the meat off the sides down to the ribs instead of leaving meaty ribs.

Looks good when we butcher thats what we do, then when cooking ribs I just cook another rack, I use sausage maker maple or brown sugar cure then smoke around 170 till it hits 120 works pretty good for me.

Danny, you can string bone them ribs with kitchen twine to make even meatier bacon or a rolled side to smoke.
You just need a small rotary saw, dremel probably has an attachment to cut off the backbone
and brisket bone.
