No way to keep a live coyote from chewing on the cable if he takes a mind to it. Beav says use 3/32 1x19 cable and stop your losses. I haven't tried it. Sounds like you need to work on how you position your locks and your support system if its possible the wind is knocking down your snares as well.

Once I went to 1X19X 3/32 all my chew outs stopped. I also have a barrel swivel In the set up. I don't know If that helps eliminating chew outs.Maybe Newt will chime In.
Can you set In entanglement? If so that will eliminate cable chew outs. Dead coyotes don't chew.

search RCR/Cable restraints, all kinds of threads. Just curious if your nailing them with the foot holds why go to the cables? Same 24 hr check, pain in finding areas to set them as you have to be so far away from entanglement.

1 x 19 cable is your answer for sure. It will eliminate at least 90% of the chew-outs.
