I have loads of butternut quash. When cooked they taste like Sweet potoes.
Has anybody made a pie out of them ?
Got a resipe to shair ?

When made into a pie it is very difficult to tell difference from pumpkin pie.

A lot of commercially canned pumpkin is really Butternut squash. Use and enjoy.

I have made pie from butternut squash, like they said it is a dead ringer for pumpkin. Also made a pie out of zucchini squash that was the same as apple.

Just like bacon... enough sugar and butter in a pie filling makes it great. My wife makes alot of soup and loves butternut, but I never found so much difference with all the different squashes/pumpkins in a soup.

Yours might just be alot better. Don't forget the nutmeg. I used to grow them but they took up too much real estate in the garden and I can buy them cheap here.

OK, the wife says I'm nuts. She says they are the hardest; toughest skin and difficult to handle.

So... My technique:
  • cut the "neck" off at the bulb. This is the riskiest cut. Just make sure you have a good grip on it and make a square cut.
  • Stand the neck up on the cut.
  • slice the skin off working all the way around, leaving a huge slab of meat I use a chef's knife, but have heard a potato peeler works.

One more thought:

I feed the guts to the chickens, but you could certainly make a nice vegetable broth by boiling and straining it.

Interesting. I have found pumpkins very easy to make into pie. Slice in half, gut, place cut down on a flat sheet pan, bake, then scoop out the finished pumpkin from the skin with a large spoon. Just took a finished pie out of the oven. Can't wait for it to cool and I can dig in!

I think she is mistaking butternut squash for buttercup squash....them things have armor skin but are the sweetest of the bunch in my experience
