I like beaver meat. I compare it to roast beef but a slightly sweeter flavor if that makes sense.

It is less gamey than venison. Unless you got some castor juice on it...then all bets are off.

Yeah, don't use your opening cut knife to butcher grin I use one knife to do an opening cut, and another knife to remove the castors immediately. I remove them as soon as I peel the hide back enough to access them, and I take them out as a big wad of fat and gland, and separate it all out later. Then I use a third knife to skin and butcher. Keeping surfaces clean, and bleeding it out into the sink for a while helps.

Beaver is good stuff! We eat so much venison at our house when we do have beef it tastes funny because we are so used to the wild taste.

Many years ago they served them in restaurants but called them "Marsh Rabbit" smile That's what my Dad told me,,it was before my time.

I like beaver and Marsh rabbit. Used to go to a wild game party every year where Marsh rabbit stew was one of the main dishes

Beaver meat is what kept many a mountain man alive. I do think they preferred buffalo though.

It's very mild tasting compared to venison.

My oldest daughter loves the "guts", and eats the tails too. I just roast them in the oven and peel the skin off and she'll munch em down.

Beaver is some good stuff! I got a gallon or so in the freezer were gonna cook up sometime
You just put the tail in the oven, peel the skin off and eat it? Ive never done that

I put it in a crock pot for 5-6 hrs. Season to taste. BBQ works too. I also ground up a couple entire beavers and pre-made burger patties. No burgers left, my son and I scoffed them down.

Muskrat is still served in restaurants here, and folks pay good price for meats! Morgan has the best recipe I’ve ever tried. I really like the flavor of it.
