I butchered my first quails yesterday, and am looking for a good simple recipe for tonight's dinner.

A search on the internet was overwhelming, and mostly not applicable. Mine are spatchcocked and skinned.

Any suggestions? grilled? baked? roasted? smoked? crock pot?

They are cage raised, not wild. So. low and slow; or hot & quick?

Seasoned flour and pan fry. Then make some white gravy with the drippings and some cathead biscuits.

We butchered 50 cortunix the other day......

Same as you minus the spatchcock....

I been seasoning with whatever seasoning you like....I'm a Tony's guy myself....

Enough oil to coat the bottom of a skillet and brown both sides....3-4 mins to each side.....

Place them in a baking dish and squirt a little Italian dressing over them and bake em at 425* for 20 mins....

Yep. Fried some wild quail with rabbits today (soaked them all in buttermilk with a couple shots Franks Redhot overnight)...

thats good too. i use a lot of dressing and bake covered at 350 for an hour. (wild bobwhites)
