Cool looking critters! I don’t mind the selfies so much as you eating rotting cheese!! As cold as it is up there you’d think they could keep that cheese from ruining!

It’s made with Canadian milk! That’s the difference lol. Cottage cheese is great in perogies! Give it a try some time!

Directions

Watch how to make this recipe.
In a medium bowl, add filling ingredients and combine well. Set aside.
In a large bowl add both flours, baking powder and salt and mix well. In a separate bowl add the remaining dough ingredients and whisk until combined. Add wet ingredients to the dry ingredient using a wooden spoon to form a ball. Cut in half. (You can freeze dough for another time, if desired.)
Flour a work surface and roll dough about 1/8-inch thick. Use a 3-inch biscuit cutter to cut out 12 rounds from the dough.
Place a dollop of filling in the center of each dough round. Fold dough over filling to form a half moon. Press edges together with your thumb. Seal the edges using the flat tines of a fork.
Bring a large saucepan of salted water to a simmer. Add perogies and cook for about 2 minutes. Drain perogies.
Meanwhile, in a large skillet over high heat, melt half of the butter and add the onion.
Cook onions for 5 to 6 minutes until slightly caramelized. Add perogies and the remaining butter. Allow to saute for a few minutes, then add the scallions.
Remove to a platter and serve with sour cream.

The Croatians and Ukiranians love their perogies.
I think they invented that stuff in the old country so they wouldnt have to eat their bootsoles when times were tough and they didnt have any real food.

Nice action on the fishers!! They are one of the coolest looking NA furbeaers. We'll never have them, they need actual forests and northern ones at that. We're lucky to have tree squirrels. The Black Hills out in western SD has some marten, maybe some fishers will ditty mount across the plains to join them someday, never can tell.

No real culture of perogies here, not enough eastern Euro ancestry people.Norskies don't really stuff things, except whatever they put on the inside of a lefse. A couple of my aunts, who grew up speaking German has their first language, used to make "cheese pockets" and "fleisch kniflah" which are both sort of like perogies. Maybe I should learn the recipes someday. I like eating big pieces of meat and less flour-dominated things. And whole pieces of fruits. I had an order of perogies at the Peace Gardens the only time I visited that place. Does that count...?

I think a Fisher would do better there than a Marten. Fisher love running around creeks and marsh. I’m sure you guys have that.
Don’t buy store bought perogies if you’re wanting to try them. Store bought suck balls!
Need them to be home made!
