Here's my recipe :
1 gallon of fresh shucked oysters (about 4 QTS.) 2 LB. of Blue Claw Crab Meat 1 LB. of cooked and chopped "Double Smoked" Bacon with drippings added 3 Gallons of Whole Milk 1 QT. of Heavy Cream 3/4 cup Worcester Sauce 3 Tbsp. of fresh cracked Black Pepper 3 Tbsp. of Old Bay Seasoning 3 Tbsp. of Cayenne pepper 2 Tsp. of Celery Seed 3 Sticks of REAL BUTTER
Cook oysters separately with their liquor until edges curl. DO NOT OVER COOK! Heat milk and cream and add all other ingredients. Add oysters and simmer for 5 minutes.
You can + / - the seasonings according to your individual taste
You own a restaurant .? That’s a pile of stew ! Sounds good ... I can see some tweaking to my recipe. No, just love Oysters and have a buddy who is a waterman :-)

Lol Nessie..... I have been loving it for over 45 years. Awesome !.....Iam always on a quest to find the best clam Chowdah. So 2 years ago...I find out about this throw back restaurant in Keene NH. So The wife and I hop in the GTO and take a drive to Keene. Come to find out...the 92 year old owner still makes the clam chowder everyday....and His Chowdah is by far the best I’ve evah had.

If you cant slerp down a few dozen raw oysters,you shouldn't even be allowed to eat oyster stew.

That looks great! I prefer fish chowder as made at a little restaurant in Maine right at the water. It is heaping in the bowl. I went into the kitchen and the owner taught me to make it. I promised to never tell anyone his recipe.
Whenever and wherever I have exquisite food I go directly to the chef or cook and learn to make it. I first learned Texas BBQ from a 92 year old man who had made Q his entire life. I am 28 years into it.

About five years ago, I had my 1st authentic clam chowdah in Maine at Jasper's seafood (Ibelieve). about a block from LL Beans. I started with a large bowl and then tried a small bowl of seafood chowdah. I liked the seafood so much that I got a large bowl of that, also. Yeah, I was one stuffed puppy. We went back two years ago and they were no longer there. That's the best I ever had, but I would sure give yours a shot.
