My Dad always said that venison tastes best if you shoot it in a month with an "R" in it, and it's pretty good in JuRly and AuRgust too!

Like I said earlier,,weather permitting,a minimum of five days in the pole barn.I leave skin on,,and if the daytime temps are going to get over 45 degrees,,I put frozen milk jugs of water in the cavity.They stay nice and cold like that and the skin holds the cold in,,and keeps the outer meat from drying out.I had just the right weather so hung one for a month one time, and it was one of the best deer I ever ate.

I like to debone mine and put in a cooler of ice with the plug out so the blood can drain for 5-7 days, makes for some really good eating

I don't often age mine but am not apposed to it . We have left some hang with the hide on because of time restraints generaly from one weekend to the next or the next . The most valuable tool is a probe thermometer if the meat has a chance to cool down early it takes alot more heat than you might think to warm it enogh to spoil a 70 degree afternoon wont get it out of the forties if the sun cant shine on the carcass. It blew my mind when i started checking temperatures just how cold that meat will stay .

One more thing my wife dosnt bother me about hunting for more deer when i have some hanging if i have a meat temp to tell her . She often cuts them up if i skin quarter and lay them on the kitchen table .
