Anyone here smoked or grilled a beaver? Daughter and I were watching a barbecuing video, and a fellow smoked a whole, small pig. That got me thinking, maybe I could put a small Beaver on the Traeger. I could brine it, and slow smoke it just like a turkey. Any thoughts?

I don't have smoker big enough for a whole Beaver but deboned smoked Beaver is awesome. I think an alabama white bbq sauce goes well with it.

Gave some to a friend once. 6 hours of applewood smoke then slow roasted with red wine. Fantastic

I've been snacking on smoked beaver jerky all day. Definitely adds another layer of flavor. I might need a lighter smoke next time as it's a bit strong.

New batch goes into the smoker tonight

yes i dry rub them an let sit over night and then cold smoke for about 8 hour ,and pull like bbq , if it dry out a little to much ,pour apple juice in it , yum , just did one for our last months trapper's meeting , everyone like it smile
