Oh heck yeah. It can basically go with anything but if someone says they only have Au Jus available I usually move on down the menu. If they don't have Worcestershire sauce I will walk out of a place! cool

Funny how different people are in ways of thinking about food.
If I make someone a steak or prime rib and they want to put horseradish, steak
Sauce or worshteshire on it I want to tell them to leave lol

You're from NY, you should know better Upstate. What is that local roast beef sandwich that's popular in south-central NY? Beef and Barrel serves it.

Anyhow, roast beef sandwiches is why horse radish was invented. laugh

Venison roast ( top round) from the pellet grill . Cant even describe how tender and good it is . Kids each chipped in and bought the grill for me as a Christmas present . coat in kosher salt , course ground black pepper , garlic and onion powder ( a favorite spice combination) . Set the grill to 200 . Cook until the roast hits 110 in the thickest part (about an hour and 20 minutes give or take ) . Seared in a version of clarified butter and olive oil to get that nice crust . Let it sit for about 20 minutes or so . Excellent even cold (the picture sliced is from today , the roast was cooked yesterday). You can not tell its venison from the taste ( which is not necessarily good because I like the taste of venison) but everybody who tries it thinks its excellent .

Tenderloin, not to be mistaken for backstrap which I have plenty of. I eat the tenderloins within a few days of killing the deer, sometimes same day.

I've gotten three doe this season. I can still get a buck or doe with my flintlock tag and I have until Saturday to do it.

I used to do a lot of crop damage hunting.

How long does Maryland's crop damage season run? Ours runs long, or at least it used to, pretty much all year except for birthing and rearing times.

I'm about three hours from the eastern shore of Maryland.

I love it all. Venison, moose, and beef. But, if I want to dash it with Worcestershire , horseradish, or a steak sauce it’s on. Food shaming is dumb. Eat what you want however you want it. It all makes a turd, in the end.

Here,we call the tenderloins " Trigger Steaks ",,cause the get eaten about an hour after you pull the trigger. smile
