Does anyone have any good cornbread recipes? It’s cold, windy and wet, seems perfect timing for some cornbread.
This is the go to here, the kids can smell it in the air or have Spidey sense or something cause they all show up when I make this. Gramm kept this recipe from her Mom, it’s been around awhile.
1 - cup churned butter 1 - cup sugar. * or not, depending on personal taste. 1 - pint creamed corn 3/4 - cup cheese cubed very small. * we’ll grate the cheese, seems to run throughout better. 1 - cup flour 1 - cup white corn meal. * yellow or white, med or coarse grind or it gets super heavy and dense with fine ground. 4 - tsp baking powder 1/2 - tsp salt 4 - eggs No fresh around here so we’ll toss in a small can of green chilies sometimes
Melt butter, then everything into the mixer until it’s smooth but a little grainy looking from the corn meal.
1/4 stick butter in the cast iron pan as it preheats. Run melted butter around pan and up the sides. Batter has to just sizzle when it hits the pan. Pour into pan around edges first to keep middle from sticking.
Into the oven at 350 for about 45 minutes, until browned, pulling from the edges and not jiggly at all.
My Great Grandma’s recipe. If she didn’t have creamed corn she’d put some sourdough starter in it for the liquid. That one you have to play with to get right, doesn’t take much, but it’s worth it.

This is a recipe Sharon gave me and it's really good! :-)
Sharon’s Cornbread
1 cup flour (I use 100 % whole wheat) 1 cup cornmeal (the light store bought works ok but I prefer the coarse stone ground-has good body) 1/4 cup brown sugar 4 teaspoons baking powder 3/4 teaspoon sea salt 2 eggs 1 cup milk (or buttermilk if you like) 1/4 cup cooking oil (butter works too) Pure Vanilla extract Black strap molasses Greased 9x9x2 pan-(butter or bacon grease does well) also I like cast iron or Pyrex bake ware, but any baking pan you like will do- Oven-425
Mix all dry ingredients in large bowl. In another bowl mix all wet ingredients. I don’t have an exact measurement for the vanilla and molasses-I pour some in as I wish-I suppose 1 tablespoon of molasses-or a bit more-and around ½ tablespoon vanilla-enough to taste it. Mix all together -beat just till smooth enough. Turn into pan-bake at 425 for 20-25 minutes. I like it nice and brown on top-easy then to see its done-but checking with a fork works too. Of course you can double or triple this recipe easy!

That ain't cornbread. Might be good but cornbread it ain't.
1 1/2 cup PLAIN CORN MEAL 1 tsp salt 1/2 tsp soda
Mix the dry well
1 1/3 cup buttermilk 1 egg
Mix wet
Heat 9" skillet in 425° oven with 2 heaping T bacon grease.
Mix wet and dry just as grease gets to smoking heat, pour hot grease into mix and stir well. Pour into hot skillet and bake 425° for 25 minutes or until top is golden and just starting to brown.
Should go without saying but considering that first recipe your skillet should be cast iron well seasoned and used only for cornbread and used daily.
You may add a half cup of cracklins or chopped onion. Possibly a hot pepper finely chopped. Chopped bacon fried until clear can stand in for cracklins.

Jiffy or the albers box both work if done in a hot cast iron skillet I use Jiffy and add a half can of cream corn makes it really moist
The bitterness of poor quality last a lot longer than the sweetness of low price

A mix? I agree its on the box but its the Quaker Oats yellow cornmeal box. Its all about time if i need to get it made fast jiffy if im not in a hurry or wanting a bigger batch then albers from scratch I get ya. I do buy Jiffy mix but only use it in scalloped corn.

Anyone grind their own corn? just Not yet but considering it as plain corn meal is getting harder to find.
