I only make real hashbrowns from potatoes i shred in the food processor. Rince them very well drain then squeeze out the water with a kitchen towel. Put equal parts butter and peanut oil in a non stick skillet, get it good and hot then put the hashbrowns in and don't move them until they are nice and crispy brown, lay a plate upside down on them, turn them all onto the plate, then slide them off back into the pan to brown the other side. Oh, salt and pepper and whole washed russet potatoes skin and all.

In a perfect world.....bacon fat or home shook butter. Unfortunatly, my bloodwork says Pam spray, Smart Balance or olive oil.

As to the "home shook" part....we don't own a cow, so I buy heavy whipping cream, put a pint of it in a quart sized mason jar and shake it til your arm feels like jello. Good stuff.
