we try and pick a weekend in the winter not much else happening and make Temales . it might be the only food all my kids agree on.


I have 18 pounds of pork shoulder thawing and 16 pounds of Maseca hoping to make 12-15 dozen will have to see how the supplies go , last year it was 11 or 12 dozen

I use meat lugs to mix the Masa

NO mail order business. not sure how well these would sell they are definitely Gringo temales my kids think medium salsa is too hot

it is a lot of work , but then 10-12 easy heat and eat meals over the next few months

Depends if you are a normal American, or from Sheboygan County, WI. Here, it's the accepted name for sloppy joe's. This county makes me shake my head some times.

To the rest of the world, they are a Mexican dish, made in corn husks.

I've always spelled it tamales. I bought some delicious Mexican tamales off a food truck in Sheboygan once.

we used to do pork and chicken

pork is less work , no picking chicken bones

3 components shreded meat middle , in a corn meal pudding almost it firms up with cooking wrapped in a corn husk.


I cook the meat over night in a nesco roaster , let cool and shred then a mix of spices is mixed with oil and then kneaded into the drained and shredded meat save the juices

then a mush is made from the meat juice , spices and corn flower "maseca" this mush is i believe called Masa

the corn husks are just a container the corn husks get soaked in water , then spread the masa on the husk like a thick layer of peanut butter that is about the consistency your looking for creamy peanut butter

lay a line of meat in the Masa then roll and fold so that you have a wrapper with a closed bottom , stack in a pot laid on it's side then transfer to the temale steamer they are steamed and when done ready to eat or package and freeze for a heat and eat meal

yes I did mis spell it I see my knowledge of any besides the Mid-western American English is non existent , I can remember numbers and stories , but vocabulary this filing cabinet doesn't do foreign words

Pete I tested in the 97 percentile on any and all standard tests except in anything like spelling and sentence diagraming. I'd test as average as anyone (75 to 80th)

Now I got it made I just spell check everything but my own name LOL

I always took a day off and invited a buddy over to make them. I can't buy the right masa here or the right chiles to cook with the meat. In CA you could buy 10 pound bags of perfect masa already cooked which saves alot of the work.

I like both chicken a pork, but like the OP, I made mine big. Alot of Mexican famililes make them at Christmas and they are smaller. On recent visits to the states I make the point of either making some or just buying them in a Mexican grocery.

A plate full of tamales with good homemade sauce on a cold day after a good duck hunt is hard to beat.

Good food.

my wife was for a time a professional proof reader , I drive her nuts.

my oldest got the language gene my others did not

my youngest had high school Spanish last semester online , I broke down an paid the oldest to get her to pass the class while she was on winter break from college , it hurt but youngest got a 92 in Spanish and NEVER wants to take any more again.

I was a terrible standardized test taker , my specialty could be called slowing down things that happen at the speed of light and figuring out what did or didn't happen.

they had a name for me back then ADDHD and I was on the speed to slow me down

in 8th grade my english teacher said if you can get an A on this test I will give you an A for the class so that I don't have to have you back next year. well I might have done a better job of remembering all that sentence structure mumbo jumbo and pulled off a 98 with 1 wrong on the test. she said well I can't actually give you an A but I can do a low B get out of here. done deal

One of my fav companies to work for use a peer review process like engineering firms do on each report. Problem is I have been doing this so long I never get peer review from a fresh out of college kid. NO! My file reviewer is awesome but imagine this. She is a divorcee from an abusive marriage nearing 65 virgo who smokes in her house reading my reports with her 17 cats.

In fact it is worse than I mentioned. Like your wife her and I have been together for years to she already knows all of my BS tricks and can anticipate where I may stumble as I make my way. She is cat to my dog but between us I get rave reviews from out clients. If a file makes it off her desk it is purdy good and everyone knows it

My ex wife makes and sells tamales for a living. She uses a Central American recipe using banana leaves for the wrappers instead of corn husks.

The recipe is unique. Besides pork or chicken, onions and peppers, there are a few peanuts, small amount of cubed potatoes, and a prune. The masa is wetted in home-made vegetable broth that she simmers for hours. Very tasty and she has a heck of a following for them in our area.


My fear of moving stairs is escalating!

If yall's tamales ever git old here is a life hack from Texas. Unwrap them and cover them in enchilada sauce and a bunch of cheese.

Its been years since I have had it that way tho b/c I eat them as fast as the girls can cook them. They feed the ones I missed to their payin customers LOL

Years ago i had a gal buying beaver carcasses to make tamales she was selling . I gave her a couple them I sold her a couple for$5 then four then all I could get her and she was willing to pay $10 . I guess they were a real hit in her community . Then her husband left her and went back to mexico and got married again . She swore off Mexicans and left the community . I never could get somebody else to pick up were she left off
