I fillet the meat off the bones then slow fry it up with mushrooms and onions.Salt,pepper,garlic,,whatever seasoning you like.Serve over noodles or rice or just by itselfe,

Place the duck breast skin side up on a cedar plank and broil at 425 for 10 minutes. Remove from oven, throw the duck in the garbage and eat the plank. (Salt and pepper to suit)

Domestic duck i think the cedar board recipe above is correct but he likez it and ill make it for him.
Not alot of duck hunting opportunities in the desert and i stop duck hunting when i couldn't find anyone else to take them.

Marinade in beef consomme for a couple hours . Grill to nothing more than medium/rare . I prefer rare. Salt and pepper. Simple as it gets .

Like most here on the Yukon river delta ie. 1.7 million acre waterfowl reserve we hunt, I eat a lot of wild waterfowl. geese, ducks, cranes ,swans etc. Flavor can depend on the species. Pintail, Widgeon, Teal are not as strong flavored as Mallard or diving ducks.
I eat a simple dish of duck and ramen, fillet the legs and breast and save the neck, gizzard heart and and liver of course. Some onion cabbage, and carrots, Lee'and Perring and balsamic vinegar and the chicken packet or chicken bouillon then the noodles, serve with rice. Its quick and easy. I dont eat it rare. Falling off the bone is best for me.
Plucked and roasted is good like mentioned above. Its a good way to eat geese. Here the snow geese are prized for eating over all others. second is the Whitefront know locally as Yellow foot. Then Cacklers, Canadians.
Stripped Swan, rolled in flour spiced and fried is delicious too.
