What is the process? Are they pickled in the end ? No. fresh eggs go in , fresh eggs come out. I ate some of mine that were over 9 months old. I have a jar now from this fall in storage if my hens quit laying.\ I believe its one tablespoon of pickling lime to one pint of water. Thats it.

Cant used washed eggs because the natural protective coating gets washed off.Just make sure you use VERY clean fresh eggs.No poop on em.One ounce(weighted oz.not measured oz.) Hydrated Lime per quart water.eggs are usualy good for up to a year with no refergeration.

My wife used a two quart jar, held 18 brown eggs,one ounce pickling lime by weight, one quart water, took about five minutes. Yup,,make sure the eggs are covered over the tops with the brine.Should be good for a year like that.We used to do ours in ten gallon crocks.
