Speakin of color you should be proud it was blue all the way around the fat ring and was actually startin to smell a bit. Man does that dry agin pay off no matter how ya cook it Might as well burn it thats would kill the smell of rotting meat. I was all for it till you said dry aged.

As an Entomologist I an sure I can see some fly larvae over in that dark meat area. Got any wiggly feelings in you Esophagus there ; Leftlane

Don't yall worry that is part is taken care of in the searing process. Anybody procreated there just added some protien.
J/k that big freeze was hard on the bugs. None out yet. Besides flies are basically good neighbors compared to fire ants and scorpions which I usually have to avoid in the hill country

Lol sorry jpark..but I gotta have some life left in mine. Ate some raw tuna for lunch. Can’t remember what it’s called but it’s a Hawaiian dish..pocki I think it’s called. The closest to raw tuna I eat is tuna from a can!

I dont know but cook it some more I think I see some parasites in there. Boco, have you ever heard of Canadian cuisine?.......neither have I. I about starved to death driving across western Canada one winter. It got to be a running joke between my buddy and I, we stopped at a lot of roadside restaurants and cafes, and everyone of them served the most overcooked, blandest "food" I have ever had to subsist on.

I guess you never ate sagabon geese,or nemestik. Great food where I am.Fresh fish is fabulous.Smoked sturgeon is unrivalled.Moose is regularly on our menu. I travelled out west with a cousin from Ireland who regularly travels the world(including many trips in the USA),he said some of the best beef he ever ate was when we were in Alberta. When I was in NY city a few years ago I could hardly eat the food it was so bad.

Lefty, this is how I do it up here. And I like it this way!! 3 1/2 year old buck during the rut. Tastes exactly like a yearling! That looks like a DIY attempt at making your own flip flops. I bet your yearlings also tase like a 3 year old buck in the rut.
