Both. Whisky spelling comes from Scotland and Whiskey from Ireland. At least that is what I read.

Concisering that I prefer the Irish water Of life as opposed to the Scottish one, its ey for me. Also, the Scots distilled their tipple after the Irish invented it that leads to another point for the ey.

Whiskey comes from the Irish Gaelic word Ishkebaha ( Spelling may be off on that ) meaning water of life.

The oldest distillery still in operation is Bushmills in Ireland. They have been at it since 1608.
