BBQ means different things in different parts of the country even in different ends of the same states.

Around here BBQ means pork usually. Sometimes chicken or beef brisket. The meat is cooked with a bed of coals from a wood fire. You don't start with charcoal. Its cooked on low heat in the natural smoke. Usually hickory is used. A sauce is placed in individual bowls and the meat dipped in it as you eat.
Wood fire is the best way to cook beef steak in my opinion. Only you want the meat right on top the coals. Nice and hot. Outside seared brown and the inside pink and warm. Should be illegal to have dippin sauce within 50 yards of a nice ribeye.
P.S. wood pellets suck. Use wood not pressed sawdust stuck together with who knows what to make pellets.
A thermometer is your friend. If your to lazy to tend your fire I guess you will never realize the goodness of natural wood and meat.

All are whole hog. No tomato, no sugar, no beans. Cole slaw is a must. Potatoes are boiled.
My favorite is Parkers

P.S. honey, molasses, cider vinegar and tomato paste are the base for a good dippin sauce. Experiment with spices. Cayenne is a good one to start with.

Only places I tried over that way were in NC. I made friends and they were tryin to be good hosts so they would drag me into what they considered good BBQ.
I guess I'm spoilt! It always tasted like pulled pork with a half gallon of vinegar poured over it and I can trip over great BBQ places here in Texas.

When I do I get 3 or 4 pounds and eat it all week. Fancy doesn't mean good

Every bit as good as the established restaurants in the area and better than many.

I had some tangy zippy yellow/orange bbq sauce down in the carolinas. Best sauce i ever had. Wish i could get more of that. All these sweet sauces are terrible.

When you invent, develope, describe a process or just come up with something you get to set the rules. You can call any kind of cooked meat yes, even meat cooked in an oven BBQ Doesn’t make it so . Just the same as calling a beef, been, and tomato concoction Chili just because it has some chili powder in it. That ain’t chili. Red or green beef or pork there are no beans or tomatoes in chili.
It is in fact ILLEGAL to cook BBQ in the traditional manor in some of our socialist states due to air quality regulations.
And sense the method of cooking BBQ Is what defines what it is the yanks are just gonna have to be envious and pretend they know what is good or not. If I want Naphili soup Mn. no doubt cheese curds Wi. You betcha.
But if I want honest to goodness kill you with wood smoke carcinogenic slow cooked beef, pig, chicken or goat BBQ Don’t mess with Texas.
