Mild like most fruit woods. Good for poultry or where you don't want overpowering smoke.

Lovely.

Fruit wood is milder than Hickory, and lends itself better for fish or fowl. Red meats stand up better to Hickory or Mesquite. smile

Smoked fish with a mix of apple and pear for many years. Good choice

I have mentioned this before, but one of the cleanest, and best flavored smoking woods I have ever used is punky, bone dry cottonwood. I just became aware of this wood for smoking in recent years, I never would have guessed it.
