I prefer 80% for grilled burgers and 90% lean for taco meat and spaghetti sauce and the like. You can't have fat dripping off your chin if you bite into a 90% grilled burger, thus, it ain't a burger!

Leave the lid off and let it cook long enough and all that moisture disappears. You're paying $5-6.00/lb for water. I worked a butcher counter when I was in high school.

We can get 93% lean here for around $6 bucks a pound. We're living a whole 'nother world now.

I spoke to a buddy that is a butcher today. He was at my place for several hours. He said he has ribeye end trim for $6 a pound. I may swing by and pick up about 50 lbs. They are vacuum packed.

I agree, 80 percent for hamburgers and meatloaf. Leaner for stuff fried in the pan.

90 percent meatloaf would be as dry as my yard at present.

Me and the neighbor split a 1/2 of another neighbors steer recently. when we went to pay him -- i had no problem with the price because it was what we had agreed upon and was within the "norms" of the going rate for beef. I wish it was easier to sell through the lockers but appointments are still months out when you make them here .. Your arrangement with your neighbor is a wonderful thing and should be easier to accomplish than it is . We had a locker appointment in early May that was made last August. The usda has made it very hard for a processor to get started through excessive regulation and predatory inspectors . The usda should not be involved in regulating meat for sale in state of origin . The state health dept is more than adequate.

Check the chain speed. Have the packers increased the supply of beef or pork.? Why not? The demand is up because the pop has increased but the packers are butchering the same number of cattle and hogs as they were when I was a kid.. 100000 beeves a day and a milllion hogs a week.. Same as it was years ago.. I'm pretty sure the American rancher can supply more livestock to the market but they cant make the packers buy them.. Artificially controlling the supply.... I think thats probably collusion.

80% lean 20% fat. Standard goal for product coming out of cow killing plants.
