I just had a piece of left over brisket earlier in the week. I always do about a 20 lb brisket and it is just the wife and I. Once it is cool, I cut what is left after we eat into thirds. One goes in the frig, and two in the freezer. I can't say pork loin is my favorite piece of pork. I would much rather have a shoulder. I cut a butt in half this morning to make cottage bacon.
