As usual I am over ran with yellow squash. What do you guys do to preserve it? I am thinking about canning it but am afraid it will turn out mushy. Any suggestions?

Me too. Slice it, (and you can LIGHTLY flour it for frying) or dice it, zip lock bags, and freeze :-)

Slice, blanch, freeze. It does turn to mush when canned.

sweet zucchini pickles are great on sandwiches , zuchini and vidalia onions with a sweet pickle brine



a really fast an easy recipie for a nice side dish or appetizer

about 1 inch around zucchini cut about 3/4 to 1 inch coins

in a glass bowl microwave 5 minutes on high , drain the liquid

arrange them on a plate close together and lay in flat ,

sprinkle with paprika , salt , pepper , garlic salt , cumin , and shredded Parmesan and a drizzle of nice olive oil microwave another minute to melt the cheese serve rigth form the plate

they are still a little crisp and have a good flavor

very fast easy way to use zuchini and you don't have to heat up the house doing it.





Zucchini hash

shred zucchini with a medium grater

mix egg , shredded zucchini and bread crumb

fry in a skillet , I like mine with catsup it's sort of like zucchini hash browns

How about dehydration? I’ve not done it (I don’t like summer squash) but it might be an option.

Please no, I've been the recipient of squash pickles to many times. Those and bread and butter are the neighbors putting up the overflow. Now if you could do lime pickles with them.

I love squash. We are just starting to get a few. Had some steamed last night. Hopefully she will fry some in cornmeal with taters this weekend

My two favorite ways are to trim the end wrap in foil with a slice of onion and pat of butter and bake til tender and the missus slices it lengthwise breads it in flour and oven fries it.

I slice it
I flour or corn meal it
I put a layer in a metal or plastic dressing pan, then a sheet of wax paper over squash
Repeat till pan is full, wax paper over top
Put in freezer till froze
Remove after froze
Place in gallon zip loc bag
Squash is just like the pre packaged ones at Wally World
Get out as many singles as you want to cook
Put the rest back in freezer
Squash have kept over a year in freezer

Other than freezing a few containers of zucchini for bread and adding it and summer squash to some of my canned spag sauce, I don't preserve it. I don't like how it cans, I don't like how it freezes and after eating it for two months I don't care if I see it again for another year

That's how we do the wife's oven fried recipe. Cut up and bread a big batch then freeze it separated on a big cookie sheet then bag.

I just picked a couple of the little yellow buggers, a zucchini and a couple green tomatoes, That will be supper tomorrow night. I will grill squash and zucchini and fry the green tomatoes. I am with Rat_Pack, I do like it, but seasonal is good enough.

I freeze most of my squash and zucchini BUT this year I'm planning to make pickled (aka sauerkraut made out of zucchini).

Last night we had stuffed zucchini.... from last year. Held up just fine.

And I'm also interested in experimenting this year with dehydrating slices.

I see yellow and queen, does anyone grow white patty pan? That's my favorite for slicing and pan frying. Meatier and not as prone to cooking up to soft.
