When the Zucchini is piling up……Zucchini Lasagna !! ….Wicked Good ! What’s Yinz cookn ?

We just had Zucchini Pizza Casserole and Jalepeno poppers wrapped in bacon.

The wife made zucchini "boats" last week. Slice one lengthwise, season with salt, pepper garlic powder and herb de Provence. Top with shredded parmesan and drizzle with olive oil. Bake til tender and cheese just starts to crisp.

Love tomatoes, zuchs, patty pan squash, onions, oak leaf lettuce,gahlic, sometimes bell peppahs, red or gold creamy potatahs , herbs , strawberries . Wild huckleberries all around naturally. This year, due to lack of time, I didn't get in that gaahden this time, but my herbs and strawberries grow like weeds all by themselves. Friends always grow more than they can handle and end up giving lots of stuff away to everyone , too . So I do get fresh grown things that way , like sweet corn. Too cold up here at my elevation to grow good corn.

I fix deerzie meat casserole dishes for them in return . Your dinnah looks great ! Need to try that sometime !

Zucchini lasagna very good. Same thing made with eggplant also very good.
