People have eaten chunks of frozen Mammoths and lived to tell the tale. It can start to taste funny if you leave it in the freezer to long, freezer burn. Pork is especially prone to an off taste if left in the freezer long.

When butchering we double wrap 1 lb venison portions in plastic wrap and then in freezer paper and tape it shut. Some hasn't been eaten until 4 or 5 years later and is just as good as the stuff eaten after a month. No freeezer burn when sealed properly. Trying to protect a large piece like a hindquarter seems almost impossible.
